Best Butter Scones

Some collabs are effortless. Silk and hair. Butter and scones. Best and Swan's Kitchen.

To celebrate the launch of our Best Butter Scrunchies with Megan Kate Swan of Swan's Kitchen, we asked Megan to share a recipe close to her heart: Best Butter Scones. Light, fluffy, and golden, they might just be the best scones you’ve ever eaten.



Ingredients:

  • 250g cold butter

  • 300g castor sugar

  • 1kg flour

  • 50g baking powder

  • 3 eggs

  • 125ml water

  • 250g plain yoghurt

  • A splash of vanilla extract

Method:

  1. Mix the wet ingredients (eggs, water, yoghurt, vanilla) together in a bowl.

  2. Grate the butter

  3. Rub the butter, sugar, flour, and baking powder into fine crumbs.

  4. Pour the wet mixture onto the crumbs.

  5. Gently bring everything together to form a dough (don’t overwork it!)

  6. Using a bit of flour and a rolling pin, roll out your dough to about two thumb’s thickness.

  7. Dip a cookie cutter in flour and cut out rounds.

  8. Brush the tops with egg wash and sprinkle with castor sugar.

  9. Bake at 180°C for 20mins or until golden brown.

Best Tip: Enjoy them warm, split open with a generous spread of butter (of course), whipped cream and a dollop of jam. If by some miracle you don’t finish them, they’ll keep happily in the freezer.

Using a pen, mark the point on the string where the end meets.

Step Three

Using a ruler, measure this length in mm.

Step Four

Match your measurement to the table below.

Don’t forget to allow for enough room to get the ring over your knuckle.

Remember that all of your fingers probably have different measurements. Make sure you measure the specific finger you are buying the ring for.

To be 100% sure, measure your finger at the end of the day. That’s when it is most likely to be at its largest.
