To celebrate the launch of our Best Butter Scrunchies with Megan Kate Swan of Swan's Kitchen, we asked Megan to share a recipe close to her heart: Best Butter Scones. Light, fluffy, and golden, they might just be the best scones you’ve ever eaten.
Ingredients:

250g cold butter

300g castor sugar
-
1kg flour
-
50g baking powder
-
3 eggs
-
125ml water
-
250g plain yoghurt
-
A splash of vanilla extract
Method:

Mix the wet ingredients (eggs, water, yoghurt, vanilla) together in a bowl.

Grate the butter

Rub the butter, sugar, flour, and baking powder into fine crumbs.

Pour the wet mixture onto the crumbs.

Gently bring everything together to form a dough (don’t overwork it!)

Using a bit of flour and a rolling pin, roll out your dough to about two thumb’s thickness.

Dip a cookie cutter in flour and cut out rounds.

Brush the tops with egg wash and sprinkle with castor sugar.

Bake at 180°C for 20mins or until golden brown.
Best Tip: Enjoy them warm, split open with a generous spread of butter (of course), whipped cream and a dollop of jam. If by some miracle you don’t finish them, they’ll keep happily in the freezer.
